Cheesy Rice Chicken


The photo above does not do this meal any justice! 
It is a perfect crock pot meal for the fall! 

1 chicken breast (uncooked in bite size pieces)
1 can cram of chicken soup
1/2-2 cups Corn (more or less )
3 carrots (cut them into pieces)
Green onion (hand full or so)
1 box of chicken rice
Grated cheddar cheese
Onion (chopped, amount depends on your taste for onion)


Spray crock pot and butter the bottom. Add chicken, cream of chicken, onion and veggies.



Cook on low. Now I'll be honest, I have an old crock pot... we're talking at least 15 years old. Every time I fallow the cook times on recipes for it, it either needs longer to cook or cooks too fast. With that being said, surprise surprise, I just continue to check every hour to see how the chicken is doing and if needed I add a little bit of chicken broth. I think this one took 2 1/2 hours on low. 

Towards the end  you can prepare the rice and add it to the mixture along with 2 cups of cheese. I usually make it once I see the chicken is almost cooked through.

Serve with biscuit or crescent roll
